Happy Valentine's Day! Hope everyone is enjoying chocolates, pink cakes, and heart shaped candies, like the lollipops above. After all, everyone knows calories don't count on February 14th.
SASSY HEART LOLLIPOPS:
Time: 30 minutes
Serves: 8 lollipops
8 Sassy Hearts
3.5 tbsp Sugar
1/3 cup light corn syrup
Dash of Flavoring of Choice (in this case, clear Vanilla Extract)
1.) Prepare by placing candy hearts facing down in the middle of the lollipop mold. Place lollipop sticks in mold as well.
2.) In a pot, combine the sugar, extract, and corn syrup. Stir well.
3.) Place the pot over medium heat. Do not stir at this point. Just wait, until your candy thermometer reads 300 degrees.
4.) Turn off the heat. Let the sugar mixture calm down for one second; it will be bubbling, and if you pour immediately, there will be bubbles in your lollipops.
5.) Pour the mixture into the molds.
6.) Wait 10-15 minute or so until the lollipops have firmed up. Then remove from the mold and enjoy!
