cookies & cream brownies

These honestly might be my favorite thing I've ever made, and therefore became the obvious choice for a first post. From experience, I will confirm that these brownies + cozy blanket + Harry Potter marathon = pure bliss. Happy New Year!

Cookies & Cream Brownies

Prep time: 10 minutes

Bake time: 30 minutes

Total time: 40 minutes

Makes 12 Servings

Ingredients:

  • 1/2 cup salted butter (1 stick)

  • 7 oz white chocolate*

  • 1 large egg, room temperature

  • 1 can (14 oz) sweetened condensed milk

  • 1 tablespoon vanilla extract

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon salt

  • 18 Double Stuffed Oreo Cookies

*This is equal to 1 3/4 white chocolate baking bars. You can use white chocolate chips, however, make sure they are made from cocoa butter. A lot of them, including Ghiradelli and Nestle, are made from Palm Kernel Oil instead.

Directions:

1.) Preheat your oven to 350 degrees.

2.) In a microwave safe bowl, melt the butter and white chocolate together in 20 second bursts.

3.) In a large bowl, combine the egg, condensed milk, vanilla, and salt. Mix with a whisk.

4.) Add the butter and white chocolate mixture.

5.) Fold in the flour.

6.) Above the bowl, roughly break apart 15 of the 18 Oreos and fold those into the batter as well.

7.) Grease a 7x11 cake pan and gently pour in the batter.

8.) Crumble the last 3 Oreos over the top.

9.) Bake for 30 minutes (the more under-baked, the better).

10.) Slice in 12 pieces and enjoy!
